Kaga fu: Fumuro-ya

Founded in 1865, Fumuro-ya makes the famous Kaga fu, an indispensable element of jibu-ni (a Kaga dish). Fu, made with high-quality protein extracted from selected flour by experienced craftsmen is formed into a variety of shapes, some as exquisite as those of Japanese confections, and some like manju or soba.

Restaurant Rokujusai

Operated by Fumuro-ya, the long-established Kaga fu shop, Rokujusai is Japan's first fu restaurant. Not only do its offerings like fu tenshin (3,500 yen) and fu kaiseki (5,000 yen) taste great, they're also beautiful. What's more, the cafe section of Rokujusai offers a range of interesting deserts not found at other cafes, including fu-anmitsu (600 yen) and fu-fruit parfaits (600 yen).

Choju-an

Choju-an is a traditional Japanese food restaurant situated on a beautifully clear stream that flows through Aramata Gorge-one of the eight most beautiful sights in Kano. The building has a 1300-year history. Foods served vary from season to season: mountain vegetables in spring, ayu in summer, pine mushrooms in autumn, and yams and bear nabe in winter. Fishing in the stream is good from spring to autumn. Lunches start at 4,000 yen and accommodations at 7,500 yen.

Mieux Le Mieux



Mieux Le Mieux is a bistro with a casual atmosphere offering French food made with fish and shellfish from the ports of Hashidate and Ataka and mountain vegetables from Mt. Hakusan-all fresh and in season. Cooking is done with little salt and sugar and no butter or cream. Lunch is from 1,500 yen and dinner from 4,000 yen. Original Mieux Le Mieux cakes can be purchased to take with you.

Sentori-zushi


Here, you can enjoy sushi made with local ingredients carefully selected at Oumi-cho Market and served on locally-made lacquer ware. Rice is also carefully cooked over a fire in water from beneath Mt. Hakusan. The Kaga sushi course (5,000 yen) featuring nigiri sushi made with fresh ingredients, sashimi, miso soup, and hors d'oeuvres is highly recommended.

Teraoka Fusha

Teraoka Fusha is a restaurant run by the Teraoka Group, whose business interests include producing and processing Noto beef. The restaurant offers Noto beef dishes such as steak, shabu shabu, and sukiyaki, as well as foie gris made in Fuki-cho. Noto beef is incredibly tender and sweet and renowned for its high quality fat.

Matsubaya

Matsubaya is a long-established Japanese confectionery. Their Tsukiyomi Yamaji-kuri mushi yokan (bean-paste jelly with steamed chestnuts) wrapped in bamboo leaves-is one of Ishikawa's most famous confections. All ingredients, including chestnuts from the Noto Peninsula and azuki from Tokachi (in Hokkaido) are carefully checked to ensure they are of the highest quality. Telephone orders are accepted and delivery to anywhere in Japan can be arranged.

Higashi Tomu

The Higashiyama Tea Shop District where Tomu is located was established in 1820 when tea shops of the feudal clan of Kaga concentrated in the area. The atmosphere of that period persists, and at Tomu you can soak it up while enjoying dinner, confections or tea. Reservations are required for dinner or to participate in a tea ceremony.

Kaika-ro

Located in the Higashi Chaya district (geisha district), Kaika-ro was built more than 170 years ago and has been designated by Kanazawa as a heritage building. Evocative of the distinctive chaya culture (culture of the geisha district) it features fusuma paintings created by wood block printers and Japanese painters, red stairways, tatami woven with gold leaf, and a Japanese garden made of glass. Kaika-ro's salon boasts Japan's largest Wajima lacquered table, a fine place to sit and enjoy light snacks. Works of traditional local craftsmen are on sale.

Hakuza

Hakuza manufactures pure gold leaf for a variety of buildings, including Nikko Toshogu and Konjikido at Chuson-ji Temple in Hiraizumi. They also sell a range of gold leafed products, such as coffee cups, tea implements, glass, golf balls, and jewelry. The reproductions of gold tea implements said to be made by Hideyoshi Toyotomi are a must-see.
